Overview

Schuyler’s new 3,700 SF kitchen and servery is designed for efficiency and versatility. The 2,400 SF back-of-house area includes dry storage, a walk-in cooler and freezer, baking prep, salad prep, general prep, cookline, and warewashing. The cookline is equipped with combi ovens, convection ovens, a steamer, a tilting braising pan, a steam-jacketed kettle, and induction cooktops, ensuring a highly functional and modern cooking environment.

The servery features two double-sided serving lines to streamline student flow, along with dedicated specialty stations for sub sandwiches and vendor-provided pizza. Additionally, one serving area is designed to double as a concession space for evening and weekend events, maximizing flexibility and functionality.
