The Oven Cellar Bar

Overview

Foodlines is contributing to several projects at COTALand, the United States’ first amusement park set within an F1 racetrack. The initial undertaking is a large restaurant building located on the 20th turn of the racetrack. Designed to accommodate 500 diners, the project includes a 6,000-square-foot production kitchen and two bars, each seating 220 guests.

The kitchen is equipped with six identical high-production cooklines, featuring heavy-duty fryers and griddles to ensure efficiency and consistency. Prepared menu items are transferred to an expo line, where they are finalized and placed on trays before being handed to customers. Surrounding the kitchen are essential support spaces, including walk-ins, dry storage, warewashing, and prep areas.

The two bars, located on separate levels of the building, are designed for optimal functionality. Each bar is fully outfitted to serve canned, bottled, and tap beverages, along with a full range of well and non-alcoholic drink options. Both bars include a dedicated beer walk-in cooler, ice machine, and storage space to support daily operations seamlessly.
