The Oven Cellar Bar

Overview

A four-story addition is currently underway at the CHI Health Center, and as part of this expansion, we designed two 1,300-square-foot pantries to help food service staff better support patrons in the suites. Each pantry is divided into two areas: one half is dedicated to walk-in cooler/freezers, while the other includes prep, warewash, high-volume ice machines, and hot holding carts.

In addition to the pantries, we also designed modifications to the existing catering and banquet kitchen. A second-flight dish machine and soiled dish table were added to complement the existing dish machine. A second walk-in freezer was introduced to increase frozen storage capacity, and two cooklines were modified to accommodate additional combi ovens and tilting braising pans, boosting productivity and output.

New beverage stations were strategically placed near the new conference rooms to streamline beverage preparation and service. The corridor design ensures ample space for hot-holding carts, staging carts, refrigeration, and mobile hand sinks, optimizing the flow of operations in the new areas.
