Overview

New additions to Lincoln’s Fine Dining and Culinary Retail options include two venues in which Foodlines’ designs have played a major part. These two facilities are a part of the Certified Piedmontese enterprise that features Piedmontese cattle raised in the Midwest at multiple ranch locations. The CP venues include both The Mercato retail butcher shop and the fine dining facility named Casa Bovina. The Mercato features Piedmontese beef, seafood, and specialty gourmet gifts. Foodlines provided both back-and-front-of-house design and equipment specifications for these projects. The Mercato layout features an open butchery, a high-end refrigerated display case, and Italian maturation cabinets for quick-aging beef and cheeses. The Casa Bovina restaurant has become one of Lincoln’s best fine-dining options, again featuring Italian beef and fine wines in a glamorous setting with an open display kitchen. In addition to the typical walk-in and under-counter refrigeration, the primary cookline is a custom Montague island suite with multiple gas hobs, a pasta cooker, fryer, baking and finishing ovens, and a wood-fired grill from Grillworks. Combi ovens and a sous vide station also play an important role in the production of the entrees. These are plated at an expo island for diners to enjoy before being served.
