Overview

Avera’s original servery was small and served 2,000 people a day, which created significant challenges in terms of space and efficiency. The existing architectural constraints, including the second floor above, limited expansion options. To address these challenges, we redesigned the space to create a more square footprint, allowing for a scramble servery layout. This layout improved the service flow and enabled Avera to offer a wider variety of food options. Additionally, we relocated the dishroom to a more central position and added extra dry storage to better support the cafeteria’s operational needs, enhancing overall efficiency and capacity.
